Every variety we grow on our Walla Walla Valley land is chosen for one reason: how it performs in your kitchen. Not how much of it we can harvest. Not how easy it is to trade. We select for flavor, nutritional density, and end-use baking performance — the things that matter to a professional baker or chef and can't be found on a commodity spec sheet.
We grow what the land does best, and we're always refining what that means.
