Everything starts in the field. We select grain varieties based on how they perform in a professional kitchen — flavor, nutritional density, and baking consistency — not maximum yield. Our regenerative farming practices, including cover crops, no field burning, and identity-preserved varieties, produce grain with greater complexity than commodity alternatives. Every bag is fully traceable to the specific Walla Walla Valley field and lot it came from. No brokers, no blending, no middlemen.

We grow using the least disruptive means possible and do not add malted barley, iron, or synthetic additives to our flour — it's straight wheat. No. Our flour is produced from wheat and processed in a facility that handles wheat. It is not suitable for individuals with celiac disease or severe gluten sensitivity.
